Southestern shrimp creole
Yield: 4 Servings
Ingredients:
- 1/4 c Margarine or butter
- 1 md Onion chopped
- 1 lg Green pepper chopped
- 1 Garlic clove minced
- 1 pk Diced pimientos (4 oz)
- 1/8 ts Salt
- 1/8 ts Pepper
- 1 cn RO*TEL Diced Tomatoes and -Green Chilies (10 oz)
- 1 lb Shrimp
Instructions:
shelled and deveined Cooked rice In a large skillet melt margarine; saute onion pepper and garlic until tender. Stir in pimientos salt pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done about 5 minutes stirring occasionally. Serve with cooked rice.
