Sicilian meat roll (created for roanoke times contest 199
Yield: 6 Servings
Ingredients:
- 2 Beaten eggs
- 3/4 c Soft bread crumbs
- 1/2 c Tomato juice
- 2 tb Parsley
- 1/2 ts Oregano
- 1/4 ts Salt
- 1/4 ts Pepper
- 2 Clove garlic minced
- 2 lb Lean ground beef
- 8 sl Boiled ham (thin)
- 6 oz Shredded mozzarella
- 3 sl Mozzarella
Instructions:
halved Combine eggs bread crumbs tomato juice parsley oregano salt pepper & garlic. Stir in ground beef mixing well. On foil pat meat to a 12x10" rectangle. Arrange ham slices on meat leaving a small margin around edges. Sprinkle shredded cheese over ham. Starting from the short end carefully roll up meat using foil to lift. Seal edges and ends. Place roll seam side down in 13x9x2" pan. Bake in 350~ oven for 1 hour and 15 minutes. Put cheese wedges over the top of the roll. Return to the oven for 5 minutes or until the cheese melts.
