Sausage~ pepper~ & onion hearty hero

Ingredients:
- 1 1/4 lb Sweet and hot Italian -sausages (total weight); -pricked w/fork
- 4 Italian hoagie rolls; or -crusty bread MMMMM--------------------VINAIGRETTE DRESSING-------------------------
- 5 tb Olive oil
- 2 tb Red wine vinegar
- 2 ts Dijon mustard
- 1 lg Garlic clove; crushed
- 1 tb Fresh thyme leaves
- 1/4 ts Salt
- 1/8 ts Freshly ground pepper MMMMM----------------------SANDWICH FILLING---------------------------
- 2 lg Leeks
- 10-oz. total; white
Instructions:
-part only cut into 2.1/2" -julienne rinsed/drained 2 Yellow peppers; stemmed rib -removed seeded/julienned 1 Tomato; diced 1/4 ts Salt 1/8 ts Freshly ground pepper Grill or broil sausages 12 mins. or until cooked through; turning often. Make dressing - in blender or food processor blend ingredients until smooth. In lg. skillet heat 1 tbsp. dressing over high heat. Add leeks and peppers; saute 5 mins. or until softened. Slice sausages diagonally; add to leek mixture. Add remaining dressing the tomato salt and pepper. Toss. Serve in rolls.
