Raysa's italian risotto
Yield: 6 Servings
Ingredients:
- 1 c Arborio rice
- 1 Green pepper -- chopped
- 1 Red pepper -- chopped
- 1/3 c Onions -- chopped
- 1 c Mushrooms -- sliced
- 2 3/4 c Chicken broth
- 1 ts Olive Oil
Instructions:
Parmesan -- optional Have broth heating in saucepan. In pan add tiny bit of olive oil. Saute onions until tender; add rice and stir until lightly browned. Add some broth and cook until absorbed. Continue adding broth until rice is tender. In another pan add a tiny bit of olive oil. Saute peppers and mushrooms until peppers are tender. Toss rice mixture with pepper mixture.
