Cauliflower with vinegar sauce
Yield: 4 Servings
Ingredients:
- 1 ea Onion chopped
- 2 ea Garlic cloves finely chopped
- 1 c Green bell pepper chopped
- 1 1/2 ts Olive oil
- 3 1/2 c Cauliflower florets
- 3 tb Vegetable stock
- 3 tb White wine vinegar
- 2 ts Paprika
- 1 ts Cumin ground
- 1/4 ts Salt
Instructions:
Saute the onion garlic & bell pepper in oil for 3 minutes. They should all be slightly softened. Add the rest of the ingredients cover & simmer until the cauliflower is tender no longer than 10 minutes. Ser e immediately. Vegetarian Gourmet, Special Low-Fat Issue 1995
