Swedish dilled roast beef & red cabbage lefse
Yield: 2 Servings
Ingredients:
- 3/4 c Red cabbage;slice paper thin
- 1 ts Raspberry vinegar
- 1 ts Vegetable oil
- 1 ts Salt
- 1 ts Freshly ground pepper
- 1 tb Prepared horseradish cream
- 2 Lefse
- 1 tb Minced fresh dill
- 2 lg Boston lettuce leaves
- 4 oz Roast beef; thinly sliced
Instructions:
1. Toss cabbage with vinegar oil salt and pepper. 2. Spread horseradish cream over lefse; sprinkle with small amount of dill. Top with lettuce roast beef cabbage and remaining dill. Roll up like a burrito. Source: Chicago Tribune January 15 1997
