Chili con carne
Yield: 5 Servings
Ingredients:
- 1 lb Ground beef
- 1 c Onion chopped
- 1 c Green pepper chopped
- 2 c Tomatoes canned
- 1 ea Garlic clove minced
- 2 ts Chili powder
- 1 ts Salt
- 1 ds Cayenne
- 1 ds Paprika
- 1 cn Kidney beans (medium can)
Instructions:
Pan fry ground beef onion and green pepper in skillet until meat is brown. Drain fat. Add remaining ingredients except beans and bring to a boil. Reduce heat cover and simmer until thick (about 1 hour). Stir in beans and heat. For dried kidney beans - use 1/2 lb (for standard serving size). Wash and cover with boiling water. Cook 2 minutes and remove from heat. Soak for 1 hour then bring to a boil reduce heat and simmer till tender.
