Sopa de melon escribe (cantaloupe soup)
Yield: 6 Servings
Ingredients:
- 1/2 c Half and half
- 1 c Potato; cooked peeled & -diced
- 3 c Cantaloupe; peeled & diced
- 1/4 c Dry sherry
- 1 pn Salt
Instructions:
Place the half and half potato and cantaloupe in the blender. Blend to a smooth puree. Stir in sherry. Season to taste. Serve chilled. If desired garnish with a sprinkle of nutmeg or a lime slice.
