Mache & beet salad

Yield: 1 Salad

Ingredients:

• 2 c Mache
• 4 White or golden beets -- cooked peeled & chopped
• 1 ts Chopped lovage or parsley
• 2 tb Balsamic vinegar
• 5 tb Olive oil
• 2 Eggs hard-boiled
• 1/2 c Home made croutons

Instructions:

In a salad bowl combine lovage or parsley vinegar and oil. Add beets toss to coat and marinate for 1 hour. Add mache toss garnish with eggs and croutons. From: The Cook's Garden catalog - Spring/Summer 1989 - page 4)
