Mache & beet salad
Yield: 1 Salad
Ingredients:
- 2 c Mache
- 4 White or golden beets -- cooked peeled & chopped
- 1 ts Chopped lovage or parsley
- 2 tb Balsamic vinegar
- 5 tb Olive oil
- 2 Eggs hard-boiled
- 1/2 c Home made croutons
Instructions:
In a salad bowl combine lovage or parsley vinegar and oil. Add beets toss to coat and marinate for 1 hour. Add mache toss garnish with eggs and croutons. From: The Cook's Garden catalog - Spring/Summer 1989 - page 4)
