Marinated black-eyed peas
Yield: 8 servings
Ingredients:
- 1/2 c Olive Oil 1 c Celery; Chopped
- 1/4 c Red Wine Vinegar 1/2 c Red Onion; Chopped
- 1 ts Salt 1/2 c Green Bell Pepper; Chopped
- 1/4 ts Pepper 1 ea Jalapeno Pepper; Chopped
- 1 ea Clove Garlic Crushed 30 oz Black-eyed Peas; Drained
- 2Cn
Instructions:
Mix the oil vinegar salt pepper and garlic then pour the mixture over the remaining ingredients in a large bowl. Cover and refrigerate at least 2 hours but no longer than 24 hours stirring occasionally.
