Home on the range tuna salad
Yield: 4 Servings
Ingredients:
- 1/2 c Water-packed Tuna drained - and flaked
- 1 c Low-fat cottage cheese
- 2 ea Hard-boiled eggs peeled & - chopped
- 1/4 c Chopped celery
- 1/4 c Chopped green onion
- 2 tb Chopped parsley
- 1 ts Lemon pepper seasoning
- 1/4 ts Salt
- 1/4 c Diet mayonaise (4 tbs)
Instructions:
1. In mixing bowl combine all ingredients. Chill. Use as salad or sandwich filling. 2. May be stored in refrigerator up to one week.
