Zucchini-parmesan sandwich
Yield: 4 Servings MMM
Ingredients:
- 2 c Zucchini diced
- 1/2 c Onion minced
- 1 cl Garlic crushed
- 1/2 ts Basil
- 1/2 ts Oregano
- 2 tb Olive oil Salt and pepper Tomato slices
- 1/2 c Parmesan
Instructions:
Saute onion and garlic with salt basil and oraegano in oil until onion is translucent. Add zucchini and saute until soft. Spread onto toast topped with thin slices of tomato and a sprinkling of fresh parmesan. This one should be broiled not grilled.
