Patty melts
Yield: 12 Servings
Ingredients:
- 2 tb Vegetable oil
- 1 Onion chopped
- 2 Cloves garlic minced
- 2 Eggs
- 2 lb Lean ground beef
- 2/3 c Dry bread crumbs
- 1 ts Salt
- 1/4 ts Pepper
- 24 Thin slices rye bread
- 24 Thin slices Cheddar cheese
- 1/4 c Olive oil
Instructions:
In skillet heat vegetable oil over medium heat; cook onion and garlic stirring for 3 to 5 minutes or until softened. Let cool. In bowl beat eggs; mix in beef bread crumbs salt pepper and onion mixture. Shape into 12 patties each 1/2 inch thick. Cook on greased barbecue grill about 4 inches above medium-hot coals or at medium-high setting for about 5 minutes per side or until no longer pink inside. Meanwhile trim crusts from bread. Sandwich each cooked patty between 2 slices of cheese and 2 slices of bread. Brush bread with olive oil and grill sandwiches for 1 to 2 minutes on each side or until cheese just starts to melt.
