Texas meatloaf
Yield: 4 Servings MAZ
Ingredients:
- 2 tb MAZOLA corn oil
- 1 Green pepper coarse chopped
- 1 lg Onion chopped
- 3 Cloves garlic minced
- 1 1/2 lb Lean ground beef*
- 2 Egg whites
- 3/4 c Old-fashioned oats
- 3/4 c Barbecue sauce divided
- 1 cn (4 oz) chopped green chilies
Instructions:
-undrained 1. Spray 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with cooking spray. 2. In large skillet heat corn oil over medium-high heat. Add green pepper onion and garlic; stirring frequently cook 4 minutes or until tender. Remove from heat. 3. In large bowl combine ground beef egg whites oats 1/2 cup barbecue sauce and chilies. Stir in cooked vegetables. Spoon into loaf pan. 4. Bake in 350 F oven for 1 hour. Drain excess liquid. 5. Invert loaf onto serving platter. Spoon remaining 1/4 cup barbecue sauce over top.
