Red onion salad with avocado dressing
Yield: 4 Servings
Ingredients:
- 1 1/2 Red onions: sliced
- 1 1/2 Stalks celery: sliced
- 1/4 lb Cherry tomatoes: halved
- 1/4 lb Snow pea pods
- 1/4 Avocado: peeled & chopped
- 1/2 ts Green peppercorns
- 1/4 c Olive oil
- 1 tb Lemon juice
- 1 tb White wine vinegar
Instructions:
Cut onions into thin slices. Slice celery and halve tomatoes. Arrange onions celery and tomatoes in serving bowl with pea pods. Combine remaining ingredients in food processor or blender and puree.
