Lime chicken shish kabob^
Yield: 4 Servings
Ingredients:
- 2 Chicken breasts cut in Cubes
- 2 Limes juice of
- 2 cl Garlic minced
- 1 tb Low sodium soy sauce
- 1 tb Apple juice concentrate
- 8 oz Medium mushrooms
- 1 Red bell pepper cut in 1" Cubes
- 16 White pearl onions
- 1 Green bell pepper cut in 1" Pieces
- 2 sm Zucchini
Instructions:
cubed Combine lime juice garlic soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours turning occasionally. Alternate chicken and vegetables on skewers. Grill or broil about 10 minutes turning and basting with marinade.
