Mint carrot pineapple salad
Yield: 6 Servings
Ingredients:
- 4 md Carrots; Shredded About 2 -Cups
- 3/4 c Pineapple; Finely Chopped
- 1/3 c Fat Free Plain Yogurt
- 2 tb Fresh Mint Leaves; Chopped
- 2 tb Lemon Juice
- 1 ts Honey
- 1/2 ts Ground Cinnamon
- 1/4 ts Ground Cumin
- 3 c Leaf Lettuce; Torn Into Bite
Instructions:
-Sized Pieces About 1/2 -Large Head Mix all of the ingredients except the lettuce in a glass or plastic bowl blending well. Cover and refrigerate about 2 hours or until well chilled. Serve on the lettuce.
