Linguine with ham~ peas~ & mushrooms
Yield: 4 Servings
Ingredients:
- 8 oz Linguine
- 2 tb Olive oil
- 4 Scallions including tops Thinly sliced
- 8 oz Mushrooms thinly sliced
- 6 oz Ham cut into matchstick Strips
- 1 1/4 c Frozen green peas thawed And drained
- 1 c Cream
- 3 Cloves garlic minced
- 1/4 ts Black pepper
- 1/3 c Parmesan cheese
Instructions:
Cook the linguine according to package directions. Meanwhile heat the oil in a deep skillet over moderate heat . Add the scallions and garlic and saute for 3 minutes. Add the mushrooms and saute 3 minutes longer. Add the ham and saute stirring for 1 minute. Add the peas cream and pepper raise the heat to high and boil uncovered for 3 minutes or until slightly reduced. Remove from heat. Drain the linguine and add to the skillet along with the cheese and toss lightly. Serve with additional cheese on the side if desired. invented by and typed by jessann :)
