Bean stew
Yield: 4 Servings
Ingredients:
- 1/2 c Olive oil
- 2 ea Onions chopped
- 4 ea Garlic cloves
- 2 lb Runner beans trimmed & -- sliced
- 1 lb Tomatoes chopped
- 1 tb Sugar
- 1 ts Salt
- 1/2 ts Black pepper
- 1 ts Basil
- 2 c Stock
Instructions:
Heat oil in a pot & fry the onion for 2 minutes. add garlic & fry together. Add the rest of the ingredients & the seasonings. Mix together well. Fry for 5 minutes. Add stock. Simer till the beans are tender. Serve hot or cold. Jack Santa Maria Greek Vegetarian Cookery
