Sorbet & berry salad
Yield: 6 Servings
Ingredients:
- 3 md Nectarines peeled and -Sliced
- 1/3 c Water
- 1/4 c Sugar
- 1 tb Lemon juice
- 1 c Blueberries or blackberries
- 1 c Strawberries
Instructions:
While we like this fruit and sorbet combination as a salad it's also. Place nectarines water sugar and lemon juice in blender or food processor Cover and blend on high speed or process until smooth. Pour int loaf pan 9 X 5 X 3 inches. Cover and freeze about 2 hours or until almost firm.Break nectarine mixture into chunks into bowl. Beat on low speed about 2 minutes or until smooth. Pour into loaf pan. Freeze about 4 hours or until almost firm.Scoop nectarine mixture onto individual plates. Arrange berries around mixture. 6 SERVINGS (ABOUT 1/3 CUP EACH); 75 CALORIES PER SERVING.
