Nectarine salad
Yield: 4 servings
Ingredients:
- 1 lb Nectarines pitted & cubed 1 tb Cider Vinegar
- 1/2 c Sweet Red Pepper chopped 1/4 ts Salt
- 1/4 c Green Onions thinly sliced 1/8 ts Black Pepper ground
- 1/4 c Vegetable Oil(or LESS) Leaf Lettuce
- 2 tb Lime Juice
Instructions:
Combine nectarines red pepper and onions in a small bowl. Whisk together oil lime juice wine vinegar salt and pepper. Pour over nectarine mixture. Refrigerate. Mound on lettuce to serve.
