Oatmeal blueberry muffins
Yield: 12 Servings
Ingredients:
- 1 c Rolled oats
- 1/3 c Salad oil
- 1 ea Egg
- 1 c Buttermilk or sour milk
- 1/2 c Brown Sugar (packed)
- 1 1/2 c Blueberries
- 1 c Unbleached flour
- 1/2 ts Soda
- 1 ts Cinnamon
- 1/4 ts Ground cloves
- 1 ts Baking powder
- 1/2 ts Salt
- 1/2 ts Allspice
- 1/4 ts Nutmeg
Instructions:
Soak oats in milk until moisture is absorbed. Add salad oil egg brown sugar and blueberries and mix thoroughly. Mix together flour soda cinnamon cloves baking powder salt allspice and nurmeg and add to oat mixture. Mix thoroughly. Fill greased muffin cups 2/3 full.
