Hearty bean soup
Yield: 6 servings
Ingredients:
- 2 tb Vegetable oil; 12 oz Great northern beans;
- 1/2 c Chopped onions; 2 c Water;
- 1/2 c Chopped celery; 16 oz (1 can) chopped tomatoes;
- 1/2 c Chopped carrots; 1/2 ts Dried basil;
- 1/2 c Chopped green peppers; 1/2 ts Dried oregano;
- 1 cl Garlic; minced 1 Bay leaf;
- 12 oz Cooked navy;or great Salt and pepper to taste;
Instructions:
-=OR=- 2 tb Parmesan cheese; Heat oil in large saucepan. Add onions celery carrots green pepper and garlic. cook until tender about 10 minutes. Add water if necessary to prevent drying. Add beans water tomatoes and spices. Reduce heat to low and cook 1 hour. Remove and discard bay leaf. Sprinkle cheese over soup before serving. Per serving: 7g protein 6g fat 21g carb. 168mg sodium 1mg chol. 157 calories.
